Lentil Kale stir-fry


Trader Joe's is my go-to store for simple, quick, and healthy meals.  Here's a recipe that only uses a handful of ingredients.  Kale, which is rich with vitamin A and C, provides a good source of calcium.  The steamed lentils are packed with fiber and iron.  And the red onion adds a nice sweetness to it.




Lentil Kale Stir-Fry

Oil for cooking
1 medium or large red onion, chopped
3 to 4 cups firmly packed chopped kale
1 package Trader Joe's steamed lentils
dash of garlic powder
dash of salt (optional)


  1. Heat up wok or pan over medium heat.  Then add oil and continue heating. 
  2. Once the oil is heated, add chopped red onions.  Saute until onions are starting to become translucent, about 5 minutes.
  3. Add a dash of garlic powder and reheat the lentils breaking up any chunks for a couple of minutes.  
  4. Add chopped kale and stir well to combine. Continue cooking kale with the lentil/onion mixture until kale greens are tender, about 5-7 minutes for me.  Taste test and add a bit of salt if desired.
