Trader Joe's is my go-to store for simple, quick, and healthy meals. Here's a recipe that only uses a handful of ingredients. Kale, which is rich with vitamin A and C, provides a good source of calcium. The steamed lentils are packed with fiber and iron. And the red onion adds a nice sweetness to it.
Lentil Kale Stir-Fry
Oil for cooking
1 medium or large red onion, chopped
3 to 4 cups firmly packed chopped kale
1 package Trader Joe's steamed lentils
dash of garlic powder
dash of salt (optional)
- Heat up wok or pan over medium heat. Then add oil and continue heating.
- Once the oil is heated, add chopped red onions. Saute until onions are starting to become translucent, about 5 minutes.
- Add a dash of garlic powder and reheat the lentils breaking up any chunks for a couple of minutes.
- Add chopped kale and stir well to combine. Continue cooking kale with the lentil/onion mixture until kale greens are tender, about 5-7 minutes for me. Taste test and add a bit of salt if desired.
