Mother's Day Breakfast in Bed--So easy dads & kids can do it!

Yes dads, keep reading...because this one's for you!  Mom will be SO surprised, and kids will love helping dad in the kitchen!

Pillsbury Ready-Made Dough: Cinnamon Morning Buns & Croissants (no egg, dairy, nuts, peanuts)

If you've got dairy allergies and have ever shopped the bread or bakery aisle looking for cinnamon or cinnamon raisin breads, you'd know they're few and far between.  The other day at my local market, I found Pillsbury Crescent Rounds, and made Cinnamon Morning Buns (not to be confused with the Pillsbury Cinnamon Rolls, which I believe contain dairy).

Just separate and smear a bit of allergy-safe butter or margarine (Earth Balance in our house), then cinnamon sugar mixture on top (stir together about 1-2 tablespoons of sugar with a few shakes of cinnamon--a little goes a long way!).  If the kids want raisins, just have them stick them between the swirls.


Bake for 10-12 minutes at 375 degrees F. 

These are so good hot out of the oven, but for a special occasion like Mother's Day, make a simple icing for your cinnamon buns.  It seems to generally consist of 4 main ingredients mixed together.  This recipe is from cooks.com; I just modified it to make it allergy-friendly:

Mix with fork until blended:
1. 3/4 c. powdered sugar
2. 1/4 tsp. safe margarine (like Earth Balance or original Benecol), melted (you can melt in a bowl in the microwave--just zap for like 5 seconds)
3. 1/8 tsp. vanilla extract
4. 1 tsp. - 1 T. safe milk (like soy or rice milk; consistency should be thick but spreadable)

Croissants


If you haven't figured it out yet, I like to make really simple things seem special.  I just don't seem to have the energy to actually make that many things from scratch anymore.

I like to make these "croissants" as we like to call them when we have a bit of extra time in the morning (usually on the weekend, when there is no birthday party, play date, school event, soccer game, or baseball game we need to rush off to).  Perfect for a Mother's Day treat that your kids will adore, too.

We use Pillsbury Crescent Rolls.  Get a coupon to buy your rolls.  Note here that there are lots of varieties, so you need to check the ingredient label for each one, since they all look really similar on the outside.  I believe all the Pillsbury biscuits contain dairy, for example. 


I let the kids roll any number of little treats inside them.  Their favorites are jam, blueberries, chocolate chips (Ghiradelli semi-sweet chocolate chips are dairy-free), and mini Aidell's Chicken Apple Sausages, but the variations are really endless!


Serve with fruit, or for something really decadent, add bacon (Oscar Mayer Turkey Bacon is a hit at our house).  Bon apetit!


Add Aidells sausage and some fresh fruit for a complete breakfast.

Don't forget mom's extra good morning kisses!  And if she's slept in a bit, she'll REALLY love her breakfast!  Ahem...
