It must have been extremely frustrating, frightening, and exhausted to try to find answers and simple, safe foods since he was affected by so many allergens. As I have told you before, my oldest son, Justin, now 7 years old, has had severe food allergies. His condition became evident at the age of 5 months. His little cheeks were always beet red, and he was always scratching himself, which made him bleed all over his body. As the doctor advised us that he was too young to have a scratch test, I also eliminated a lot of the food with allergens. At the age of one after consulting with numerous allergy specialists, we decided to go with Schuman Tam,M.D. in San Francisco. As a result, I eliminated everything that he was allergic to from our diet because I was breastfeeding. He was found to be allergic to dairy, all nuts, eggs, beef, chicken, lamb, pork, wheat, and all seafood except for crab, seabass, and salmon. Searching for other food that we can eat, we even flew to Japan to get tested by allergists there. There we found a few more foods that we were able to consume. Now years later, after a few trips on the ambulance and Epi-pen incidents, he is still allergic to nuts and dairy, but outgrew all the other allergens. With eggs and beef, I still have to cook them very well.... It is wonderful that Ryken's school is also cooperative with his condition. Also at Justin's school, the teachers, classmates, and their mothers all know about his food allergies and when they serve baked goods at parties, they always contact me listing all the ingredients. When I look back to those years making everything from scratch and not going out to eat, it must've been hard.
